It’s a skill to make a good pudding, and chef Jeremy Lee at Soho member’s club Quo Vadis is one of the best in the business. At the moment there’s St-émilion au chocolat torte, almond and nougat tart with apricot preserves, and hazelnut cake with quince, custard and cream on the menu.

Phil Howard is another great old-school pudding chef, serving the likes of tarte Tatin and salted caramel mousse at Elystan Street in Chelsea – and he made one of the best rice puddings I’ve ever tasted.
