A particular­ly brilliant butcher has just opened near me in Old Spitalfiel­ds Market. At The Butchery Ltd, Nathan Mills (aka @naththebut­cher) and Ruth Siwinski do whole carcass butchery and sell pasture-fed native breeds that they get from small farms around the country.
