Brandy butters, tried and tested

Brandy butter (also known as “hard sauce”) is a Christmas classic, the perfect complement to a host of festive desserts including Christmas pudding and mince pies (the hotter the better for a rich, melting dollop). Making your own is simple, but if you’re short of time there are some great options on the high street. Typically around seven per cent of the tub is brandy, with creamy Jersey butter and sugar rounding it off. Load up!
