Marie rose sauce
The classic topping for a prawn cocktail, it’s excellent with crab too or even with a burger. Add a tablespoon of finelychopped onion and two of chopped sweet pickled cucumbers for a homemade Thousand Island dressing.
MAKES ABOUT 90ML INGREDIENTS
4 tbsp mayonnaise
2 tbsp tomato ketchup
1 tsp brandy (optional) Dash of Worcestershire sauce Lemon juice, to taste
METHOD
Mix the mayonnaise, ketchup and brandy (if you are using it) together with a dash of Worcestershire sauce. Taste and add a few drops of lemon juice.
This keeps for up to a week in a jar in the fridge.
