TREACLE AND COCOA CAKE

Many teens have low iron levels (especially if they

are vegan) so adding iron-rich treacle, cocoa and prunes to a cake will

be a boost. It may even give them a taste for the intense flavour of

iron-rich food.

INGREDIENT­S

125g flour

4 tbsp cocoa powder

¾ tsp bicarbonat­e of soda

Pinch of salt 100g caster sugar

3 tbsp black treacle mixed with

120ml hot water

4 tbsp vegetable oil 100g ready-to-eat prunes,

finely chopped

METHOD

h Line a 500g loaf tin with baking parchment and

preheat the oven to 180C/160C fan/gas mark 4.

h Stir together the flour, cocoa powder, bicarb, salt and sugar. Mix the treacle

water, vegetable oil and prunes. Stir together the

two mixtures and pour into the prepared tin. Bake

for 35 minutes, until a skewer inserted in the middle comes out clean.

Cool in the tin.
