1,500 DAILY CALORIE MEAL PLAN – Lunch

BROCCOLI AND PECORINO SOUP

(Serves 4)

INGREDIENT­S

1 tsp olive oil

1 red onion, diced

2 cloves of garlic, finely grated

500ml vegetable stock, from a cube

2 heads of broccoli, chopped

500ml semi-skimmed milk

1 heaped tsp Dijon mustard

50g pecorino (or parmesan)

cheese, finely grated Salt and black pepper

METHOD

➤ Heat the oil in a large saucepan. Add the onions and garlic and fry for 2-3 minutes. Add the stock and then the broccoli. Top up with milk to make sure the broccoli is well covered. Add the mustard and cheese, bring to the boil and simmer gently for 20 minutes until the broccoli is tender.

➤ Transfer to a food processor or use a stick blender to blend to a smooth consistenc­y. Season with salt and pepper to taste.
