Bake Easter biscuits
What you need
300g plain flour
150g salted butter, cut into cubes
150g caster sugar
1 egg
2 tablespoons vanilla extract
500g icing sugar
Large bowl
Small bowl
Wooden spoon
Cling film
2 baking trays
Baking parchment Rolling pin
Egg-shaped cookie cutter Food colouring
Coloured icing pens
Instructions
Put the flour in the large bowl and rub the butter into the flour to form crumbs. Mix in the caster sugar. In the small bowl, beat the egg and vanilla extract together then pour it into the large bowl and mix with a wooden spoon. Knead the mixture with your hands until it forms a smooth dough. Wrap the dough in cling film and put it in the fridge for 15 minutes. Heat the oven to 180°C/gas 4. Line two trays with baking parchment. Roll out the dough to roughly the thickness of a £1 coin. Use the cookie cutter to cut out the biscuits and lay them on the trays. Bake for 12–15 minutes, until they’re pale gold. Remove from the oven and leave to cool. For the icing, add a little water to the icing sugar and mix well. Mix in a drop or two of food colouring if you’d like to give your icing some colour. Use a knife to spread the icing on the biscuits, and add patterns with the icing pens.
