Bake chocolate lava cookies

What you need

● 200g dark chocolate, finely chopped

● 100g unsalted butter, diced

● 100g caster sugar

● 150g brown sugar

● 2 eggs

● 130g plain flour

● 50g cocoa powder

● 1tsp bicarbonat­e of soda

● 1/4tsp salt

● 100g icing sugar

● Heatproof bowl

● Saucepan

● Spoon

● Oven gloves

● Large bowl

● Electric mixer or whisk

● Plate

● 2 baking trays

● Greaseproo­f paper

● Wire cooling rack

Instructio­ns

First, place the heatproof bowl over a pan of simmering (not quite boiling) water. The bowl should sit so the water does not touch the bottom of it. Then add chocolate and butter to the bowl, stirring until it has fully melted. Now remove the bowl, using oven gloves. The bowl will be hot, so ask an adult for help. Next, put the caster sugar and brown sugar into a large bowl and add the eggs. Then use an electric mixer or whisk on the mixture until it is pale and has tripled in size. Pour the chocolate into the egg mixture and mix together. Add all the dry ingredient­s except icing sugar and mix well. Cover the bowl with a plate and chill in the fridge until firm (about 3–4 hours). Heat the oven to 180°C and line two baking trays with greaseproo­f paper. Now, roll the dough into 20 balls and roll these in a bowl of the icing sugar, coating them as much as possible. Put the balls on the trays, l ving space in between. Sprinkle hick dusting of icing sugar over ch ball. Bake for 12–13 minutes ntil the cookies are cracked. emove from the oven and allow o cool on the baking trays for five minutes before moving to a wire ack to cool completely. Any that aren’t eaten as soon as they are cool will stay fresh for a week in a sealed container.
