AS WE went to press yes­ter­day, one of the bor­ough's cooks was busy try­ing to prove she was the school chef of the year.

Kelly Millins from Shin­field In­fants School was tak­ing part in the South East re­gional fi­nals for the McDougalls School Chef of the Year con­test.

Her en­try was Fish Is Swish: fish on a bed of cab­bage and lo­cally sources veg­etable noo­dles topped with a gin­ger and cour­gette steam dumpling and a side of sweet chilli.

For dessert she was mak­ing Ba­nana Bake Is The Cake: a 2020 sugar com­pli­ant ba­nana cake with lemon­grass in­fused cus­tard and straw­berry top­ping.

The con­test took part at Premier Foods’ base in St Al­bans and sees the chefs have to pre­pare four por­tions of a main and dessert suit­able for serv­ing to 11-year-olds.

The chefs had 90 min­utes and a bud­get of £1.30 per per­son.

The win­ner from this re­gional heat will go on to rep­re­sent the whole of the South East of Eng­land, against nine other Re­gional Cham­pi­ons, in the Na­tional Fi­nal which is to be held on March 7. A Sec­ond place may be awarded at the Re­gional Fi­nal at the dis­cre­tion of the Judges.
