Should I interlock, overlap or take a double-handed baseball grip?

It’s all about personal preference. I’m an advocate of the interlocking grip, which is the way Jack Nicklaus held the club, but the key is to keep the hands compact and working together. Be aware that if your pinky and forefinger are jammed too tightly together, you’ll lose feel and tighten the tension in the middle of the grip.
