Squats are a great way to build up strength in your quads again. They do a huge amount of work in the mountains, especially on long descents. Keep your back straight, and squat until your upper legs are horizontal, then descend and ascend slowly and smoothly, taking care not to bounce. Quality is key to this exercise. Two sets of 10 squats a session.
