BILBERRY PANCAKES AT HOME AT CAMP
■ Handful of bilberries/blaeberries gathered on the hill
■ 125g plain flour
■ 1tsp baking powder
■ 150ml milk
■ ¼tsp vanilla extract
■ 2 bananas
■ Lump of butter for frying
(Eggs omitted for obvious reasons!)
Chuck the flour and baking powder in a ziplock bag, and pour the milk and vanilla extract into a bottle.
Mash the bananas into the flour and milk mixture in a spare pan to make a batter. Give it a good stir to try to get the lumps out, and when you’re done put the bilberries in. Meanwhile, melt some of the butter in a flat pan over the stove, keeping the rest for more pancakes. Pour in enough batter to make a pancake about 10cm across and flip it when it begins to bubble in the middle (about 2 mins). Serve when golden-brown with more berries and honey or maple syrup.
