An old favourite, quiche, gets a makeover with layers of buttery filo pastry as an easy base with a punchy paprika egg filling. Next she introduces a teatime treat she discovered in the USA – a peanut-encrusted cookie with a caramel centre. And for a no-fuss midweek family meal, there’s a Thai-style cod and coconut noodle broth baked in the oven. ★★★ MC
