Nadiya continues to inspire in the second helping of her six-week cookery course, this week concentrating on speedy bakes. An old favourite, quiche, gets a makeover with layers of buttery filo pastry as an easy base with a punchy paprika egg filling. Next she introduces a teatime treat she discovered in the USA – a peanut-encrusted cookie with a caramel centre. And for a no-fuss midweek family meal, there’s a Thai-style cod and coconut noodle broth baked in the oven. ★★★ MC
