Hello Vegan Life,

I was wondering if you would be interested in featuring my story.

Last year, COVID-19 devastated lots of lives. I also contracted this and was very poorly. Lockdown proved difficult for all — my partner, diagnosed with cancer, underwent extensive treatment, which still continues. My beloved dog, Phoenix, was soon after diagnosed with bladder cancer. Heartbreak­ingly, he passed over the over the rainbow bridge. My life, my shadow.

I have been vegan for over 10 years and love Vegan Life magazine, so during this stressful time I put my soul into making cakes and baking bread. My colleagues at work loved my vegan cakes and this started a lovable trend. You see, I work for the NHS as a staff nurse on very busy stroke unit, so keeping spirits high there and at home for myself and partner was a challenge initially, and difficult.

Recently, I entered a vegan ‘bake off’ challenge organised by Animal Aid. My cake was all vegan and I called this ‘Over the rainbow bridge’ in memory of all animals that have passed, including my beautiful Phoenix. Amazingly, to my efforts I won first prize! It is truly unbelievab­le. Animal Aid even featured my cake recipe on their website. It has been absolutely fantastic and moral boosting for me, my partner and working colleagues. I hope you like the picture of my cake! And hopefully you will consider my story of strength, durability, courage and bringing back happiness.
