Mega Brunch Bowl
Serves 2
Smoky sweet potato sausages, juicy cherry tomatoes and filling chickpeas make this brunch bowl the perfect comfort food on a lazy Sunday.
• 4x Gosh! Smoky Sweet Potato Sausages
• 8 cherry tomatoes
• ½ tbsp olive oil
• ½ medium brown onion, diced
• 1 clove garlic, crushed
• 100g (3.5oz) mushrooms, sliced
• ⅔ tin chickpeas, drained and rinsed
• 2 tsp smoked paprika
• Salt and pepper, to taste
• Handful of spinach
• 1 avocado, sliced
• 2 slices sourdough bread (optional)
1 Preheat the oven to 180°C (fan oven)/350°F/ Gas 4.
2 Place the sausages and tomatoes on a lined baking tray and cook in the oven for 12-15 minutes.
3 Heat olive oil in a pan and sauté the onion and garlic for a few minutes.
4 Add the mushrooms and chickpeas to the pan.
5 After a few minutes, add in the smoked paprika, salt and pepper to the chickpea mixture.
6 Once ready, remove from the heat and mix in the spinach.
7 Remove your sausages and tomatoes from the oven.
8 Divide and transfer everything into your bowls, slice your avocado and add a delicious slice of toasted sourdough to serve.
