Irish Soda Bread
Serves 8
Soda bread is known as quick bread, with no complex sequences or steps. It’s the perfect low-maintenance recipe to befriend.
• 400ml (14fl oz) Rude Health Soya Drink
• 2 tbsp crushed flaxseed
• 4 tbsp warm water
• 500g (1.1lb) plain flour
• 40g (1.4oz) granulated sugar • 2 tsp baking soda
• 1 tsp salt
• 4 tbsp plant-based butter
1 Preheat oven to 200°C/400°F/Gas 6. Line a baking sheet with a silicone baking mat or baking parchment.
2 Whisk the flaxseed with the warm water and set aside.
3 Whisk the flour, sugar, baking soda and salt together in a large bowl. Cut the butter and mix with your hands through the flour. Add the soya drink and flaxseed mixture. 4 Gently fold the dough together until dough is too stiff to stir.
5 Knead the dough for 1 minute.
6 Make a nice bread shape and lay on the baking mat.
7 Bake until the bread is golden brown, about 40 minutes.
