Nordic soul
The potent combination of mod Danish cuisine and design makes even the most casual gastro outing in Copenhagen such a pleasure. Design firm Space Copenhagen didn’t miss a trick when it furnished a former oil warehouse in the historic Christianshavn quarter for René Redzepi’s new 108 restaurant. Light floods through tall windows into the high-ceilinged space, providing relief from raw concrete, exposed brick, dark burnished metals and weathered timber. In the kitchen, Noma alum Kristian Baumann blends his Korean heritage with Danish sensibilities, creating picture-perfect plates with ingredients such as preserved berries, flowers, fermented pumpkin seeds and squid guts.
