Rirkrit Ti­ra­vanija’s Buñueloni

Twenty-five years since Rirkrit Ti­ra­vanija doled out free green curry to a vo­ra­cious crowd at Man­hat­tan’s 303 Gallery, food re­mains key to the Thai con­cep­tual artist’s prac­tice. He has part­nered with gal­lerist Gavin Brown on a restau­rant in up­state New York, chef Dalad Khambu on Ber­lin eatery Kin Dee (see W*224), and fel­low artist To­bias Re­hberger on a food stall at Frank­furt’s Klein­mark­thalle. His twist on a Ne­groni sub­sti­tutes Carpano An­tica For­mula ver­mouth for Cam­pari. Topped with gin, ‘in suf­fi­cient quan­tity to en­sure its dom­i­nance over the other in­gre­di­ents’, Ti­ra­vanija’s cre­ation ‘has ex­cel­lent ef­fects on the imag­i­na­tion.
