The most influential eatery of the century moved into a purpose-built new home last year (W*229), an 11-piece ‘village’ designed by BIG around a Second World War-era arsenal overlooking Christiania. Glass walkways with Scandinavian terrazzo flooring link the buildings, each formed of a different material, from concrete to tombac. Studio David Thulstrup’s interiors balance the refined and the relaxed, with bespoke designs such as tables by Brdr Krüger, and lights in limestone and dried seaweed made by Jonas Edvard. Depending on the season, the menu focuses on seafood, vegetables or the bounty of the forest, served on ceramics commissioned by stylist Christine Rudolph.
