On a Sunday we generally have roast dinner, and as there are only two of us (or three if you include the dog) there is generally quite a bit left over.

Therefore I was looking to create something with some roast beef and thought of the old Scottish favourite – stovies.

It is such a comfort food and uses up not only the leftover meat but quite a few vegetables.
