SALMON WITH HONEY MUSTARD DRESSING

Ingredient­s:

■ 2 salmon fillets

■ 2tbsp grain mustard

■ 1tbsp honey

■ Juice and rind of 1 lime

1. Pre-heat oven to 180 degrees.

2. Mix together the grain mustard, honey, lime juice and lime rind.

3. Place salmon fillets in a greased casserole dish.

4. Cover salmon with the mustard sauce.

5. Place in oven and cook for approximat­ely 15 minutes.*

6. Serve with a side of your choice.

*Karen’s tip – I like my salmon served very pink and just cooked, so adjust the time according to your taste but be sure not to overcook or it becomes dry.
