Lettuce celebrate summer with salad
As we approach summer one of the things I love to do is concoct various different salad dishes, and when I say‘concoct’ I roughly follow a recipe but use whatever ingredients are available from my fridge.
I made this one recently which is really enhanced with the use of pesto as a dressing. Try to make your own pesto as it makes all the difference.
