CHEATS TIKKA MASALA CURRY
(Serves 4)
INGREDIENTS:
1kg mixed vegetables; 640g tikka masala curry sauce; 250g basmati rice From the store cupboard: 1tbsp oil
METHOD:
1. Place the vegetables into a saucepan and add sufficient boiling water to cover. Bring back to the boil and simmer for three minutes. Stand for one minute then drain.
2. Heat 1tbsp of oil in a saucepan. Add the vegetables, stir-fry for three to four minutes. Sprinkle the seasoning from the cap of the curry sauce jars and stir-fry for a further one to two minutes. Add the sauce from each jar and simmer until vegetables are cooked.
3. Meanwhile cook the rice as per packet instructions.
