The Hope family’s simple sourdough loaf

100ml Sourdough Starter

375 ml Warm Water

525g Strong Bread Flour (such as the one from the Matthews Cotswold Flour range)

2 Tsp Salt

Method

Mix all the ingredient­s in a bowl and leave overnight. The next day knock back the dough and let it stand for 30 minutes, then place it in an oiled cast iron casserole with the lid on and bake for 20 minutes at 200 °C, then remove the lid and bake for another 20 minutes until golden.

For a healthier option, substitute up to 200g of the flour with wholemeal bread flour.
