SUE STONEMAN’S CHOCOLATE BROWNIE RECIPE
“This is a lovely gooey chocolate brownie recipe – perfect to perk you up during lockdown,” says Sue.
90g dark chocolate
150g unsalted butter
2 eggs
15g cocoa powder
125g plain flour
300g light brown soft sugar Half tsp baking powder
Half tsp LittlePod Vanilla Paste Line a tin with baking parchment paper – 24cm x 20cm
■ Gently melt the butter and chocolate in a saucepan and set aside to cool.
■ Sift the flour, baking powder and cocoa powder into a bowl. In another bowl, beat together the eggs and the sugar and vanilla extract with an electric whisk until light and creamy.
■ Whisk in the melted chocolate and butter then carefully fold in the dry ingredients (sifted together) until fully combined.
■ Pour the mixture into a lined tin.
■ Bake for 25 minutes at 170C. They should be slightly soft in the middle still. Leave to cool in the tin. Carefully remove from the tin and cut into squares with a sharp knife. Sprinkle with icing sugar if you like. Eat on their own with a cup of tea, or with cream and fresh raspberries or strawberries.
