Paradise on a plate!
Gino D’acampo samples the delights of Bologna and Modena…
For Italian chef Gino D’acampo, a fan of both fast cars and slow-cooked food, the Emilia-romagna region is the perfect destination as he continues his foodie tour of his homeland.
Home to Ferrari, the area, which boasts the cities of Bologna and Modena, has more than sports cars to its name and is also the birthplace of bologna, Parmigiano Reggiano and the ‘black gold’ that is balsamic vinegar.
‘This is the food basket of Italy,’ says Gino, who gets to take a Ferrari for a spin. ‘Any ingredient you can think of, it’s growing in this region and it’s super-tasty. If Italy is a meal, then Modena is the main course.’
Fabulous food
While in the city, Gino visits a food market and meets
Mamma Rossella, chef to Formula 1 legends, who shows him how to make the perfect ragu. He also tries his hand at picking moretta cherries that have been grown in the area since the 19th century before visiting a producer of the region’s famed balsamic vinegar.
Finally, Gino combines all the ingredients he has collected to make incredible Italian hamburgers. ‘I think it’s probably everybody’s favourite dish,’ he explains. ‘It’s my favourite part of Italy on a plate.
‘This is my personal paradise. Thank you, Emilia-romagna.’
