Happy birth­day, Robert Burns! The Scot­tish writer, born on 25 Jan­uary 1759, was so en­am­oured with his coun­try’s na­tional dish that he wrote a poem about it, Ad­dresstoa Hag­gis. Tra­di­tion­ally made us­ing a sheep’s stom­ach stuffed with liver, lungs and heart, hag­gis re­mains one of Scot­land’s favourite foods.
