Beer can roast chicken
this way of cooking makes chicken incredibly moist and gives it a delicious malty flavour. Serve with a selection of autumnal veggie sides like butternut squash mash or cauliflower.

1.4kg chicken
2tbsp olive oil
330ml can ipA beer
1 lemon
1 bunch of fresh parsley, chopped
1 Heat the oven to 180C, Gas Mark 4. Rub the oil all over the chicken, and season the skin. Cut the strings to open the chicken.
2 Open the beer and place it onto a roasting tray. Sit the chicken on top of the can so that the can fills the central cavity.
3 Roast for 1 hr 30 mins, until the juices run clear. Remove the chicken from the beer can (be careful, as there may be some beer left in the can) and place it on a serving platter. Tie the legs together, as it’s easier to carve this way.
4 Add a squeeze of lemon to the cooking liquids – this will be your gravy! Scatter over fresh parsley to serve.
