Tortilla chips with party guacamole
Tequila adds a subtle kick to this creamy dip – give it a shot!
Serves 6 • Ready in 30mins
12 mini tortillas or flatbreads (we used Crosta & Mollica Mini Piadas) 3tbsp olive oil
for the guacamole
4 avocados
4 spring onions, finely sliced
90g cream cheese
1tbsp tequila (optional)
1 garlic clove zest and juice of 1 lime
2 red chillies, finely sliced (optional) fresh coriander leaves, to serve
1 Heat the oven to 200C/Gas Mark 6. Cut the tortillas into quarters. spread them out onto a baking tray in one layer. Drizzle over the olive oil and sprinkle with sea salt. toss to ensure the tortilla pieces are evenly coated. bake for 15-18mins, until the chips are crisp and golden.
2 For the guacamole, mash together the avocados, spring onions, cream cheese, tequila and garlic to a rough consistency. stir in the lime zest and juice, and serve the guacamole topped with the chillies and coriander, alongside the tortilla chips.
