Chocolate avocado mousse
We’re big fans of this nutrient-rich version of a classic dessert, which hides a healthy secret! Avocados are loaded with heart-healthy monounsaturated fatty acids and are a good source of fibre.
Serves 4 • Ready in 15mins, plus chilling
75g dark chocolate
100ml coconut cream
100ml honey or maple syrup
2tbsp cocoa powder
1tsp vanilla extract
2 ripe avocados shaved chocolate or cocoa powder and gold leaf, to decorate
1 break the chocolate into squares in a heatproof bowl. set over a pan of boiling water. Make sure the bottom of the bowl isn’t touching the water. once melted, add the coconut cream, honey, cocoa powder and vanilla, and stir until smooth.
2 Put the avocados into a blender or food processor and whizz with the melted chocolate mixture until it’s silky smooth.
3 Divide the mixture between 4 serving pots.
4 Chill in the fridge for at least 3hrs. top each mousse with a little chocolate or cocoa and gold leaf.
