Cook’s tip

The coals are ready when they start to turn grey with a light ash coating. The highest temperature is when the coals are red with a white/grey top. Medium is when some coals are brown and others are red. Another way to check is by holding your palm an inch or two above the grate. 1-2 seconds is high, 3-4 seconds is medium heat.
