Strawberry and basil G&Tea
celebrate World gin day on 8 June with this delicious fruity cocktail. Perfect for sipping in the garden.
Serves 6 • Ready in 15mins, plus cooling and freezing
for the ice cubes: strawberries, lemon zest julienne, small bunch of basil for the cocktail:
3tbsp demerara sugar
3 strawberry & raspberry tea bags (we used Twinings)
400g strawberries, sliced small bunch of basil
150ml gin (we used no.3 gin, which has been voted the best gin in the world an appropriate three times!) ice, to serve
1 For the ice cubes, arrange the strawberries, lemon zest and basil into ice cube trays, pour over some water and freeze overnight.
2 Bring a litre of water to the boil, add the sugar and stir until dissolved. Remove from the heat, add the tea bags and infuse for 4mins. Remove the tea bags, cool at room temperature for 20mins, then transfer into a large jug and chill.
3 Before serving, add the strawberries, basil, gin and ice to the jug. Decant into tumblers to serve.
