Spicy spatchcock chicken
This traditional method for prepping chicken is a great way to cook meat evenly all over. Perfect for a grill or barbecue. If you’re unsure, ask a butcher to spatchcock it for you.

1 medium chicken
1 bottle of quality BBQ sauce – we love Sauce Shop’s award-winning one from sauceshop.co
1 Rinse the chicken and pat dry. Lie breast-side down on a chopping board with the cavity towards you.
2 Using kitchen scissors, cut along both sides of the backbone to remove it.
3 Turn the chicken over and press it down flat. Rub with the BBQ sauce, season, then cook on a hot grill (or barbecue with the lid closed), for 40mins. Turn halfway through cooking. Per serving: Cals 245, Fat 15g,
