Pancetta-wrapped scallops
Make sure they’re super fresh! Serves 6 • Ready in 20mins
18 large scallops
6 slices pancetta, cut into 2 strips 1 seedless lemon, very thinly sliced
1 Wrap 12 of the scallops in a piece of ham and lay a slice of lemon over each of the remaining scallops. Thread onto 6 skewers (2 pancetta-wrapped, with 1 lemon-wrapped in the middle).
2 Season and cook over a hot grill for 2-3mins, turning once, or until the scallops are opaque.
