Grilled vegetable tacos
When you’re entertaining, you can’t go wrong with a tasty taco. Do-it-yourself toppings are perfect for relaxed, informal get-togethers with friends and family.
Serves 4 • Ready in 30 mins
1 red pepper, diced 1 yellow pepper, diced 1 green pepper, diced 2 red onions, quartered 15 mushrooms, quartered 2 fresh corn cobbettes, sliced to 1cm thick 2 courgettes, sliced 1 aubergine, cubed
2tsp ground cumin
2tsp ground coriander 2tsp ground smoked paprika
2tsp ground chilli powder 5tbsp Mazola Corn Oil 12 corn tortillas to serve:
1 lime, fresh coriander, cherry tomatoes, sour cream, salsa and guacamole
1 Heat a griddle pan until very hot. Add the chopped vegetables into a bowl and sprinkle them with the spices and Mazola Corn Oil, plus salt and pepper. Mix well to ensure the vegetables are coated.
2 Cook the vegetables in batches in a griddle pan, until they soften and become slightly charred.
3 Remove the cooked vegetables and warm your tortillas in the griddle pan.
4 Fill the tortillas with the grilled vegetables. Add a good squeeze of lime juice, plus coriander and cherry tomatoes to each, and serve with sour cream, salsa and guacamole.
