Broad bean hummus
This is creamy, delicious, and looks so fresh and vibrant!
Serves 4 • Ready in 20 mins
450g podded broad beans
2 garlic cloves
12 mint leaves
1tbsp lemon juice
1tbsp tahini
4tbsp olive oil
2tsp toasted sesame seeds
1 Boil a pan of water, add beans and garlic, then simmer for 5 mins; drain.
2 Put the beans and garlic in a food processor with a pinch of salt. Add the mint leaves, lemon juice and tahini. Blitz to combine. Gradually add 3tbsp olive oil and blend until smooth.
3 Spoon into a serving bowl. Just before serving, drizzle with 1tbsp olive oil and sprinkle with sesame seeds. Per serving: 242 cals, 19.5g fat, 3g sat fat, 8.5g carbs
