Lemon thyme gin

An easy gift to make and so moreish – make sure you save a little for yourself.

Makes 70cl • Ready in 10 mins, plus 1 week’s infusing time

4 large lemon thyme sprigs, plus extra to decorate 2 strips unwaxed lemon zest 5tbsp caster sugar 70cl bottle of gin

1 Wash the lemon thyme and pat it dry with kitchen paper. Place the lemon thyme, lemon zest and caster sugar in a large, clean lidded glass bottle or jar. Pour in the gin, making sure that the lemon thyme and lemon are submerged. Seal the jar and leave it in a cool dark place for 1 week to infuse. 2 After the steeping time, strain the gin into sterilised glass gift bottles or jars, adding the fresh thyme for decoration. However, leave strict instructio­ns for the recipient to remove them after one week, to prevent the herb flavour from overpoweri­ng the gin.
