Smoked chicken and clementine salad
TIP Swapping the chicken for smoked fish is also delicious
A quick, refreshing salad is the perfect contrast to all the hearty meals.
Serves 4 • Ready in 15 mins
3 clementines 3tbsp extra virgin olive oil ½tbsp lemon juice 300g cooked chicken breast 2 heads of chicory Handful watercress 2tbsp pomegranate seeds 3 spring onions, chopped
1 Use a sharp knife to pare the skin from the clementines and slice the flesh into thin rounds. Squeeze any remaining juice from the clementine skins into a bowl and stir in the olive oil, lemon juice and a little seasoning to create a dressing.
2 Arrange the clementine slices, chicken, the trimmed leaves from the chicory and the watercress on 4 serving plates.
3 Scatter with the pomegranate seeds and chopped spring onions, then spoon the dressing over.
