Best-ever bread sauce
500ml (16fl oz) whole milk 2 onions, quartered 6 whole cloves 2 bay leaves 5 black peppercorns 100g (3½oz) granary or white breadcrumbs 15g (½oz) butter 4tbsp double cream ½tsp grated nutmeg 1
Put the milk in a pan, add the onion, cloves, bay leaves and peppercorns. Bring to the boil, then strain into another pan. Add the breadcrumbs and, over a low heat, stir until smooth. Stir in the butter, cream and nutmeg. Season to taste. Serve warm. Per serving: 162 cals, 11g fat, 7g sat fat, 9g carbs.
