Individual tiramisu

Speedy and delicious. When time is short, you can whip this dessert up in just 20 mins.

Serves 6 • Ready in 20 mins

500g mascarpone cheese

85g caster sugar

25g dark chocolate, finely grated

3tsp instant coffee granules

100ml Tia Maria

24-30 amaretti biscuits, plus 6 to decorate

1 Beat the mascarpone until soft, then beat in the sugar. Reserve 1tbsp of the grated chocolate for decoration and stir the rest into the mascarpone.

2 Dissolve the coffee in 1tbsp boiling water and add the Tia Maria. Put the biscuits, apart from the six for decorating, on a deep plate. Pour over the coffee mixture and leave to soak for 1 min. Put a soaked biscuit in the bottom of six serving glasses and add 1tsp of the coffee liquid to each one.

3 Divide half the mascarpone mixture between the glasses and top with the remaining soaked biscuits.

Spoon on the rest of the mascarpone mixture and pour over the remaining coffee mixture. Sprinkle with the reserved grated chocolate and top each glass with a biscuit.

TIP Even though this is a great last-minute dessert, it can also be made in advance and will keep in the fridge for several hours
