Tikka salmon skewers with minty yogurt
Give salmon steaks an instant flavour boost with ready-made curry paste.
Serves 2 • Ready in 30 mins
2tbsp tikka curry paste
6tbsp natural yogurt
½ lemon 260g skinless salmon fillet, cut into 2cm cubes
¼ cucumber, diced
A few mint leaves, roughly chopped, plus extra to serve
1 red onion,
½ sliced and ½ cut into wedges
Warmed naan breads or parathas
1 Mix the curry paste with 2tbsp of the yogurt and a good squeeze of lemon juice. Stir in the salmon cubes to coat then thread onto wooden skewers alternating with the onion wedges.
2 For the minty yogurt, mix together the remaining yogurt with the cucumber and chopped mint.
3 Heat a griddle pan until hot. Add the skewers and cook for a couple of mins on each side until cooked through – it will take about 10 mins in total.
4 Serve the skewers with the yogurt and naan breads or parathas, scattered with red onion slices and leftover chopped mint.
