Surprise sausage Bolognese
A tasty twist on everyone’s favourite pasta dish, using sausages and plenty of hidden veg. Ideal for fussy eaters!
Serves 4 • Ready in 35 mins
1 carrot, roughly chopped
1 celery stick, cut into 4
4 spring onions, trimmed
2 garlic cloves, peeled
400g sausages
1tbsp olive oil
400g can tomatoes
4tbsp balsamic vinegar
350g pappardelle or spaghetti
2tbsp freshly grated Parmesan
Basil leaves, to serve
1 Put the carrot, celery, spring onions and garlic into a food processor and blitz to finely chop. Add the sausages and blend again to a mince texture.
2 Heat the oil in a frying pan over a medium heat. Tip in the sausage mix and cook for 15 mins, stirring, until it breaks up. Add the tomatoes and vinegar, and continue to cook until warmed through.
3 Meanwhile, bring a large pan of salted water to the boil. Add the pasta and cook for 10 mins, or according to the pack instructions, until just tender. Drain.
4 Toss the pasta together with the sausage Bolognese sauce. Season and serve with grated Parmesan and a scattering of basil leaves.

TIP You can use meat or veggie sausages for this dish. You don’t have to squeeze them out of the skins – just blitz them in a food processor as they are
