Smoked salmon filo bites

So simple to make and yet so impressive. Makes 30 • Ready in 20 mins, plus cooling 4 sheets filo pastry 40g butter, melted 1 egg, beaten Small bunch dill 150g pack Boursin cheese 200g pack smoked salmon, cut into strips Lemon wedges, to serve

1 Heat the oven to 180C/Gas 4.

Lay the filo pastry out on a board. Brush one sheet with melted butter and egg, and scatter over small sprigs of dill. Top with another sheet of filo and repeat. Continue the layering with all the sheets of filo, finishing with a final brush of butter.

2 Cut the pastry into bite-sized triangles and place on a baking tray. Baked for 5-8 mins until golden and crisp. Leave to cool.

3 To serve, spoon a little Boursin on to each pastry bite and top with a ruffle of smoked salmon, a sprig of dill and a grinding of black pepper. Serve with lemon wedges.

TIP Top with prawns instead of salmon or for a veggie topping use antipasti artichokes from a jar
