Spiced lamb koftas with minty cucumber raita

TIP You can roast the koftas in the oven instead of frying them. Drizzle with oil and cook at 200C/ Gas 6 for 20 mins

Fuss-free mini versions of these tasty kebabs. Makes 12 • Ready in 30 mins, plus chilling 500g lean minced lamb 1 red onion, finely chopped 2 garlic cloves, crushed 2tsp garam masala 1 small red chilli, chopped Small bunch mint leaves, chopped 1tbsp sunflower oil For the raita: ½ small cucumber, coarsely grated 200g natural yogurt Small bunch mint leaves, finely chopped ½tsp ground cumin 2 spring onions, chopped

1 Mix together the lamb mince, onion, garlic, garam masala, chilli and mint, and season well. Divide the mixture into 12 even portions and form into sausage shapes around wooden skewers. Chill for 30 mins.

2 Heat the oil in a pan, add the skewers in batches and fry over a medium heat for 6-8 mins until browned and cooked through. Keep warm in a low oven.

3 For the raita, squeeze excess liquid from the cucumber then mix with the yogurt, mint, cumin and spring onions. Season and serve with the koftas.
