Three more evening meals you might like to try out… ✢ Mussels in spicy tomato and garlic sauce Add canned chopped tomatoes to softened chopped onion, chilli and garlic. Thin the sauce with a little white wine if needed. Add 200g fresh mussels for 5-10 minutes. Top with chopped parsley and serve with toasted ciabatta brushed with olive oil and crushed garlic.

✢ Zesty salmon with roasted vegetable couscous

Roast a mix of vegetables with chopped chilli and garlic. Sprinkle a salmon fillet with paprika and a few dried chilli flakes and bake with the roasted veg. Make the couscous using boiling water and grated zest and juice of 1 orange and 1 lime. When the veg is cooked, combine with the couscous and top with the salmon.

✢ Beef cannelloni with mozzarella cheese

Make a bolognese sauce using extra lean steak mince. Fill dried cannelloni with beef bolognese. Make a tomato sauce with chopped canned tomatoes added to softened onion and garlic – reduce by simmering gently for 20 minutes. Add chopped basil and pour over the filled cannelloni. Sprinkle over a little grated mozzarella and bake for 15 minutes. Stick to 2 cannelloni per serving.
