Fish and broccoli tray bake

TIP Serve with crusty bread to mop up the tasty juices or with thinly sliced new potatoes tossed in a little oil, spread on a baking tray and cooked in the oven at the same time as the tray bake

A simple fuss-free way to cook any chunky fish fillets such as monkfish, salmon or cod loin.

Serves 4 • Ready in 40 mins 1 onion, cut into thin wedges 300g cherry tomatoes on the vine 200g Tenderstem broccoli

5tbsp olive oil, plus extra for drizzling

4 x 150g pieces of chunky fish fillets (white fish or salmon) 1 lemon, sliced

Small bunch of dill, roughly chopped

1 Heat the oven to 200C/gas 6.

Put the onion, cherry tomatoes and broccoli in a large roasting tin, add the olive oil and toss well to mix. Season with salt and freshly ground pepper, then cook in the oven for 20 mins until starting to soften.

2 Place the fish pieces on the top with the lemon slices and drizzle with a little extra oil. Bake for a further 15 mins, until the fish is cooked through and flakes easily. Scatter with chopped dill, to serve.
