Gammon and sweet potato chips

TIP Spread the gammon with barbecue sauce or a pot of tomato salsa instead of mango chutney

A one-pan bake that’s packed with flavour and easy on the washing up, too.

Serves 4 • Ready in 40 mins

2 x 240g gammon steaks

4tbsp mango chutney

500g sweet potatoes, unpeeled and cut into chips

1tbsp olive oil

8 spring onions, trimmed

12 cherry tomatoes on the vine

1 Heat the oven to 220C/gas 7.

Trim any fat off the gammon and cut each steak in half to make four pieces. Spread each piece with mango chutney and put in an ovenproof dish.

2 Scatter over the sweet potato chips, drizzle with oil, season and bake for 20 mins.

3 Turn the chips, add the spring onions and tomatoes and cook for 10 more mins until the veg is tender. Per serving: 400 cals, 21g fat,
