Easter bunny melting moments

Fun biscuit beauties to enjoy.

Makes 18 biscuits • Ready in 45 mins, plus cooling time

220g butter

90g icing sugar

90g cornflour

250g plain flour

1tsp vanilla extract

For the filling:

100g softened butter

110g icing sugar, sifted, plus extra for dusting

2tbsp Nutella

You will need:

Bunny-shaped cutter

1 Heat the oven to 180C/gas 4. Beat the butter and icing sugar until fluffy. Fold through the cornflour, flour and vanilla. Stir until mixture comes together. 2 Roll out on a floured surface to about 1.5cm thick. Cut out bunny shapes with the cutter, reusing the trimmings to make 36 shapes. 3 Bake for 12-15 mins until golden and crisp. Remove from the oven and transfer to a wire rack to cool.

4 Beat together the filling ingredient­s and use to sandwich together pairs of biscuits. Dust lightly with icing sugar. Per biscuit: 243 cals, 16g fat,

10g sat fat, 24g carbs

the biscuits
