Camilla’s gin with cucumber and mint
Serves 4 • Prep 10 mins 120ml gin
2 thick slices cucumber
A few mint leaves
Ice
Tonic water, to top up Concertina folded ribbons of cucumber on cocktail sticks, to decorate 1 Blitz the gin, cucumber and mint together in a food processor. Place a couple of ice cubes in each of four glasses and pour over the gin mixture. Top up with tonic water and decorate with cucumber ribbons.
