1 Frozen Straw­berry Mar­gar­i­tas

Sweet and re­fresh­ing. Serves 4

220g straw­ber­ries, hulled 100ml te­quila

30ml triple sec

30ml lime juice

300g ice cubes

1 egg white

2tbsp caster sugar

blend the straw­ber­ries with the liq­uids in a blen­der, then add the ice cubes and blend again. dip the rims of 4 glasses in the egg white, then into the sugar. di­vide be­tween the glasses.

2 Peroni Li­moni

Lager adds body to sum­mer cock­tails. Serves 1

bunch mint leaves 15ml lemon juice 5ml sugar syrup 30ml limon­cello 150ml peroni

shake the mint, lemon juice, sugar syrup, limon­cello and some ice in a cock­tail shaker. sieve the mix­ture into a tall high­ball glass then top up with lager. gar­nish with a lemon slice and mint.

3 Pink Sangria

Great for serv­ing a crowd. Serves 6-8

250ml pomegranate and rasp­berry juice 750ml bot­tle sparkling rosé 400ml sparkling wa­ter 100ml triple sec

220g straw­ber­ries, sliced into rounds 1 or­ange, sliced ½ wa­ter­melon, sliced into small wedges

com­bine all the cock­tail in­gre­di­ents in a large jug, then add the sliced fruit.

4 Al­co­hol­free Seltzer

This has no booze but is any­thing but bor­ing! Serves 6-8

500ml co­conut wa­ter 500ml tonic wa­ter ½ cu­cum­ber, sliced 2 hand­fuls mixed berries ice cubes

com­bine all the in­gre­di­ents in a large jug and stir.

5 Iced Espresso Mar­tini

Try sprin­kling with co­coa pow­der for a sweeter fin­ish. Serves 1

ice cubes

30ml brewed espresso 25ml vodka

25ml Kahlúa

30ml bai­leys crushed ice and ground cof­fee, to serve

shake the ice cubes, espresso, vodka, Kahlúa and bai­leys in a cock­tail shaker, then pour into a mar­tini glass over crushed ice. sprin­kle over a lit­tle ground cof­fee to dec­o­rate.

6 Ne­groni

This bril­liantly bit­ter Ital­ian clas­sic is mak­ing a come­back. Serves 1

30ml cam­pari 30ml gin 30ml ver­mouth slice of or­ange ice cubes

Mix all the liq­uids and pour into a short tumbler with a few ice cubes. gar­nish with the or­ange slice. w&h

The se­cret to a great cock­tail is to start with sparkling glasses, plenty of ice and in­spi­ra­tion!
